Last week, the food blogging world lost one of it’s brightest stars, Joan Hayes of Chocolate, Chocolate and More.  Today is National Chocolate Day, so in honor of Joan, many of us are posting chocolate recipes.Gluten-Free Double Chocolate Scones

Gluten-Free Double Chocolate Scones

  • 1½ cups gluten-free all-purpose blend
  • ¼ cup cocoa
  • ¼ cup coconut palm sugar
  • 1 tsp xanthan gum
  • 1 tsp gluten-free baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 Tbsp butter
  • ½ cup milk
  • 2 tsp vanilla
  • 1 egg
  • 1 cup chocolate chips (mini chips would work really well)
  1. In a mixing bowl, whisk together the first seven ingredients (dry).
  2. With a pastry blender, cut in the butter.
  3. (You can also put this in a food processor to mix)
  4. Add the milk, vanilla, and egg.
  5. Stir in the chocolate chips.
  6. Divide the dough out onto two balls.
  7. Pat each into mounded circles on a gluten-free floured work surface.
  8. Cut each circle into four wedges.
  9. Place on a rimmed baking sheet.
  10. Bake in a preheated 400 degree oven for 12-14 minutes.

I first met Joan through the Online Blog Conference.  It was an informal, totally online conference that became an active group on Facebook.  Joan’s friendly personality soon put everyone at ease.  She headed up conversations and helped us find answers.  Later, I had the opportunity to meet her in person at Disney World for the Food Blog Forum.  She and I spent much of the lecture time laughing when we were supposed to be listening.  We met each others families and came away friends.  At the end of 2013, another blogger and I gathered a little group of like-minded bloggers and started holding Google Hangouts.  Joan was part of that group.  We spent many evenings exchanging ideas, shushing our kids in the background, laughing at silly things and forming stronger bonds.  The fifteen of us that were in that group were especially hit hard when the news reached us that Joan had passed away.  It was such a shock, such a heart break for all who knew her.online blog conference friends meeting at the food blog forum in orlando, flJoan became a phenomenal success on Facebook.  Her page has over 2 million likes.  She generously shared other blogger’s food posts, resulting in wonderful traffic spikes for us.  She had no problem sharing her knowledge and passing along help whenever we asked.  She went through many personal trials, but it didn’t get her down.  She will be sorely missed by hundreds of people she hadn’t even met in “real life.”Gluten-Free Double Chocolate Scones
