I have been chronically anemic for most of my life.  It’s part of living with Hashimoto’s.  It means I have sad looking bags under my eyes and doctors telling me to take iron pills.  I don’t like iron pills though.  So, I look for ways to add more iron to my diet.  I don’t like liver very much, so I came up with a sweeter, more enjoyable way to increase my iron.

These bars are naturally gluten-free, but don’t contain any weird ingredients.  My kids like them…but I don’t advertise the prune content.  Teenagers are so funny about admitting to liking prunes.  Chocolate Peanut Butter Energy Squares

Chocolate Peanut Butter Energy Squares

  • 1½ cup prunes
  • 1 Tbsp honey or agave or black strap molasses
  • 1 Tbsp all-natural creamy peanut butter
  • ¼ cup cocoa
  • ¼ cup chocolate chips
  • ¼ ground chia seeds
  • ½ cup almond meal
  1. In a food processor, combine prunes, honey, peanut butter and cocoa.
  2. Blend until a smooth ball forms.
  3. Remove from the processor to a bowl or plate.
  4. Combine chocolate chips, chia meal and almond meal in the food processor, and process until the chips are broken up and the mixture is a fairly uniform consistency.
  5. Add the prune paste back into the food processor and combine everything.
  6. Firmly press the mixture into a 7×11 pan.
  7. Refrigerate for 30 minutes and then cut into squares.
  8. Alternately, you could scoop the mixture into balls and serve them in that form instead.

I used a really heavy duty food processor for this recipe. You may have to process the prunes all by themselves in batches. Once they are smooth, add the other ingredients per the instructions.
