Chocolate Chunk Cookie BarsChocolate Chunk Cookie BarsIt’s time for Pass the Cookbook Club led by Kita from Pass the Sushi.  In an effort to actually cook from the myriad of cookbooks she owns, Kita started this group for bloggers and non-bloggers alike.  Each month, she picks a cookbook and three recipes from that book.  We get to chose a recipe, make it our own if we want, and then in the Facebook group and on our blogs.  Anyone can join in, so if you are interested, ask to be a member of the FB group to participate.Chocolate BlondiesChocolate BlondiesThis month, our recipes were chosen by another member of the group, Jen, from Juanita’s Cocina.  She chose Ina Garten’s Barefoot Contessa Foolproof: recipes you can trust.  We could chose from ribs, gazpacho or these blondies.  I knew my gang would love a dessert, so I opted to go that route.

I have to be honest, I was not totally thrilled with this recipe.  Although they turned out and my family gobbled them up in less than twelve hours, I don’t know if I will revisit them again.  (that statement would make my husband laugh, because as a blogger, I don’t revisit any recipes often, even family favorites).  However, I felt like these were simply chocolate chip cookies in a bar form…and I like my recipe better.   That is the beauty of this club, though.  You get to try out recipes from cookbooks you may not own and get to “preview” them without purchasing.

Chocolate Chunk Blondies, er, Brunetties #passthecookbookclub

  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • ½ cup sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 10 oz pkg Hershey’s semisweet baking melts
  1. Cream the butter and sugars.
  2. Add the extract and eggs and mix well, scraping down the sides.
  3. Combine the flour, soda and salt and add the dry mixture to the wet.
  4. Stir in the baking melts.
  5. Spread the batter in a greased 9X 13 pan and bake in a preheated 350 degree oven.
  6. Bake 30 minutes or until a toothpick comes out with just melted chocolate..no dough.
  7. Cool and cut.
