Pinterest board for a chance to win a variety of culinary-themed prizes.Apple Walnut Rice Pudding that goes together in a snap using @successrice #glutenfree #SuccessRice #adThe whole family loved this rice pudding.  There was a little left over from dessert, so my daughter and I polished it off for breakfast the next day.  I think Apple and Walnut Rice Pudding would make a great breakfast every day, but the hungry hordes in my house would never let me keep it around longer than 24 hours.

Apple Walnut Rice Pudding

  • 3 bags Success® White Rice (you can use brown, if desired) (6 cups cooked)
  • 2 cups half and half
  • 1 cup honey
  • 1 tsp salt
  • 2 cups milk, divided
  • 2 eggs
  • 1 tsp vanilla
  • 3 apples, peeled, cored and chopped
  • ½ cup walnuts, chopped
  • 4 Tbsp butter
  • 1½ tsp cinnamon
  • ¼ cup brown sugar (I used coconut palm sugar)
  1. Cook rice according to package directions in a Dutch oven.
  2. While rice is cooking, cook apples with walnuts, cinnamon and brown sugar in butter in a skillet.
  3. When apples are soft, set aside.
  4. Drain rice, throw out water and then empty rice bags back into Dutch oven.
  5. Add half and half, honey, salt and 1 cup of milk.
  6. Cook, stirring occasionally for 15-20 minutes on medium heat.
  7. Combine eggs and remaining 1 cup milk.
  8. Add a bit of the hot rice to the milk/egg mixture to temper it (you don’t want to pick cooked egg out of your pudding).
  9. Then add the warm milk/egg mixture into your Dutch oven.
  10. Stir continually until it thickens.
  11. Remove from heat and add the vanilla and apple mixture.
  12. Serve warm.
