Cardamom Amaranth Granola from @BobsRedMill Everyday Gluten-Free Cookbook

Cardamom Amaranth Granola is a nice change from the normal cinnamon type granola.  It’s easy to make and SO good to eat!

I discovered Kind Granola Clusters a while back.  I noticed they have amaranth in them (the tiny little ball like grain), so when I came across this recipe for homemade granola with amaranth, I knew I had to try it.  Add the cardamom changes up the flavor profile from the usual.  It has a more floral note than the spicy cinnamon we consumers are used to.   However, it’s a nice change.  This granola recipe came from Bob’s Red Mill Everyday Gluten-Free Cookbook: 281 Delicious Whole-Grain Recipes.  I totally recommend the cookbook for any of you who are 1. gluten-free, 2. adventurous in the grocery store, buying fun new grains, but who then get home and don’t know what to do with them, or 3. into whole grains, have knowledge but want to add to their repertoire.

Cardamom Amaranth Granola

  • 3 cups old-fashioned oatmeal
  • 1½ cups unsweetened shredded coconut
  • 1 cup amaranth
  • ½ cup warmed coconut oil
  • ½ cup honey
  • 1½ tsp ground cardamom
  • ½ tsp salt
  1. Combine the oatmeal, coconut, and amaranth in a large bowl.
  2. In a smaller microwave safe bowl, combine the remaining ingredients.
  3. Heat for 1 minute and stir well.
  4. Pour honey mixture over the oatmeal mixture and stir to coat.
  5. Spread the oatmeal mixture on a greased rimmed baking sheet.
  6. Bake in a preheated 300 degree oven for 20 minutes.
  7. Let cool on the pan and then transfer to an air tight container.

To make this gluten-free, use gf oats.
