I found chestnut flakes at Whole Foods and knew exactly what I wanted to do with them.  Grain-free granola bars!  These are similar to an energy bar, but no refined sugar, no gluten, no dairy.

We are slowly unpacking from the move.  What an experience it was moving across the country from one corner to another.  I loved showing my kids things that they had never seen.  We talked about the Civil War as we meandered through the South.   We talked about the pioneers as we went through western Missouri and Iowa.  We saw the Little Big Horn and had a discussion about how “white man” had treated aboriginal tribes throughout the world.  They were able to put concrete knowledge together with book learning.Grain-Free Chocolate Granola Bars made with chestnut flakes instead of oatmeal!

I thought it was interesting and scary, however, to see that the only two crops we saw from Tennessee to Iowa was corn and soybeans.  It wasn’t until South Dakota that we saw sunflowers and mowed fields of wheat.  Montana and Washington had more wheat.  Wyoming was simply cattle and hay.  I didn’t see any fields of just plain old vegetables.  Where are they being grown?

Grain-Free Chocolate Granola Bars

  • ½ cup natural, no sugar added peanut butter
  • ¼ cup raw honey
  • ¼ cup coconut oil
  • 3 Tbsp cocoa
  • 2 Tbsp chia seeds
  • 1½ cups chestnut flakes
  • 2 Tbsp unsweetened coconut
  1. In a large microwave-safe bowl, melt the peanut butter, honey and coconut oil for one minute in the microwave.
  2. Stir in cocoa until smooth.
  3. Add the chia seeds, chestnut flakes and coconut.
  4. Pour into a foil lined 8×8 pan.
  5. Refrigerate until solid, then cut into bars.
