I have long been a fan of Mediterranean cooking.  I love fruit, vegetables, whole grains, olive oil, nuts and yogurt.  When the opportunity arose, I jumped at the chance to review Idiot’s Guides: The Mediterranean Diet Cookbook.  This series of books breaks the subjects down to the nitty gritty.  I read the whole book while sitting by the community pool one afternoon.  I knew the first recipe I wanted to make from it was Garlic Scrambled Eggs.  They sounded like something my entire family would devour.

Garlic Eggs with ground beefThis book is broken into two main sections with sub-chapters in both.  The first section only takes up twenty-three pages, but explains what the Mediterranean Diet is all about.  The health benefits of adhering to this way of eating are espoused along with an explanation of the components of the lifestyle.  The second section is  two hundred forty plus pages of recipes, ranging from breakfast to dessert.

The recipes are easy to read.  They have the yield, prep time, cook time and serving size first, followed by a chart of nutrition information.  The ingredients are next followed by step by step instructions.  At the bottom of the recipe are things like healthy hints, definitions and tasty tips that give you more information about ingredients or ways to cut down calories.  There are no photos in the book.

The Garlic Scrambled Eggs were a big success.  They made a simple Sunday night dinner, but of course would also be fabulous for breakfast.  Even my egg hater ate them and said they were good.   I tripled the recipe so that my whole family could eat.  The family ate the eggs with toast on the side.

Garlic Scrambled Eggs

  • ¼ pound ground beef
  • ½ tsp sea salt
  • 1 Tbsp minced garlic
  • 4 eggs
  • ½ tsp ground white pepper
  1. Brown the meat in a skillet over medium heat, breaking up the chunks as you stir.
  2. Add the garlic, salt and pepper and continue to cook another few minutes.
  3. Crack the eggs into the pan.
  4. Stir and cook until the eggs are done, about 2 minutes.

I tripled the recipe with good results.
