Sometimes I wish I could drive a little mini front loader into my kids bedrooms, scoop them up when their alarms go off and drop them onto the ground.  Nothing seems to wake them up!  Well, I take that back.  Second Son, who is a senior, gets himself up all by himself.  However, Third and Fourth Sons and lately, even Only Daughter, seem to have no ability to get up on time.  So we rush and rush through the morning with me calling out, “10 minutes!”  “5 minutes!”  “Your ride is here!”  “You are late…again!”  Thank goodness for Aunt Jemima frozen waffles, now with #4morewaffles.Aunt Jemima Frozen Waffles; now with FOUR more waffles in every bag!On the occasion when the children actually get out of bed when I first turn on their lights, they can sit down to a breakfast with waffles, butter and syrup.  However, when they are flying by the seats of their pants (most days), they can still enjoy a good waffle breakfast with these quick sandwiches.  While the kids are picking out their clothes, I can whip up these babies in about five minutes.  I keep pre-made flavored butters in my fridge.  The salsa butter is simply drained salsa and a few Tablespoons of butter mixed together.  Combining the salsa and butter keeps the soggy factor at bay in the assembled sandwich.

The Aunt Jemima waffles go into the toaster, the pre-cooked sausage patties go into the microwave, and the eggs get cooked up on the stove all at the same time.  In a couple of minutes, I put the sandwiches together assembly line style and then wrap them in foil.  Wrapping them in foil helps keep them warm as well as keeping all of the sandwich fillings out of the kids’ laps.  Only Daughter enjoyed one in the car just the other morning.

Each Aunt Jemima package now contains 14 waffles instead of 10.  That means I can get 7 sandwiches!  I picked up my packages in the Frozen Breakfast section at Publix.  They were really easy to see in the bright red resealable bags!

Frozen Waffle Breakfast Sandwich Olè

  • 2 Aunt Jemima Frozen Waffles
  • 1 pre-cooked frozen sausage patty
  • 1-2 slices Cheddar cheese
  • 1 egg, scrambled, fried or poached
  • 1 Tbsp salsa butter (1/4 cup butter mixed with ½ cup salsa that has been drained through a sieve until only 2 Tbsp dryer salsa remains)
  1. Toast frozen waffles according to package directions.
  2. Microwave frozen sausage patty according to package directions.
  3. Cook egg according to your tastes.
  4. To assemble the sandwich, place 1 slice of cheese on one toasted waffle, top with cooked egg.
  5. On the other waffle, spread 1 Tbsp salsa butter and top with hot sausage patty.
  6. Add one more slice of cheese if desired and the put the two waffles together.
  7. Fold a 12 inch square of aluminum foil in half and then wrap around the waffle sandwich, leaving the top half of the sandwich exposed.
  8. Eat!
